Manufacturing Process
How is it made?
Some foods naturally have Monosodium glutamate such as, cheese and tomatoes. In the early 1900s, MSG was extracted from rich protein foods such as seaweed. Today MSG is made from corn starch, sugar cane, sugar beets or molasses. MSG is made by a natural method that has been used for over centuries. This is known as the fermentation process. It is similar to how wine, beer, vinegar and yogurt are made. MSG is usually found in Asian corner stores. The packaging is white and red with Monosodium Glutamate in red big letters and Chinese lettering.

Raw Materials
Monosodium Glutamate is made up of different raw materials. It is made up of the most commonly use bacteria called Corynebacterium glutamicum, previously known as Micrococcus glutamicum. Glutamate is a very popular bacteria that is used in other amino acids. The producers prefer sugar to make MSG. Sugar sources such as sugar cane or beet molasses, starch hydrolysates from corn or cassava tubers, and even tapioca. The first sugar source available is the first to be used. With sugar, ammonia and ammonium salts are added. To finish off the process vitamins and other nutriments are included.
Upstream Process

Operation
MSG follows a generic bioprocess flow. A generic bioprocess flow is the Fermentation process. The fermentation process starts with realising sugar of it's acids. The sugar is then added little by little to avoid disadvantaging effects of high amounts of sugar.
Scaling Up
At the start of the process Glutamate is kept in separate shake flasks. They are set at high volumes.
Fermentation
Oleic acid is added to the mixture. The temperature is set to 33 degrees. Throughout the process the tempreture is raised and lowered until Monosodium Glutamate is created.
Downstream Process
Extraction
The fermentation is the used to get red of unwanted material.
Crystallisation
The product is then stored for 2 days at 20 degrees for it to crystalize.
Polishing
The product is then put in water and dissolves and is converted to monosodium salt. They then turned into crystals and is left out to dry and ready for use.
The Industry
The China-based Fufeng Group is the largest producers of MSG. Meihua is the second largest producers of MSG. othe companies that produce MSG are Jiali International Corporation and Shanghai Tuo Dong International Trading Co. Ltd. An estimated 1.7 million of L-glutamate are produced annually.
